Wedding cakes and desserts in Australia

What to ask before you book a cake

  1. Decide whether the cake is the only dessert

Some weddings serve the cake alone, some add a dessert table, a gelato cart, late-night doughnuts or cultural sweets, and some skip the cake altogether. Decide which yours is first, because what you ask the cake maker for follows from it.

  2. Count your guests before you choose the tiers

The number of tiers decides how many slices there are. Ask the baker how many servings each tier gives, then choose the number of tiers from your guest list rather than from a photo.

  3. Ask about a fake tier if you want the height without the waste

If you want a tall cake for a smaller guest list, ask the baker about polystyrene tiers iced to match the real ones. They can look the same in photos, cost less than a real tier and stop good cake going to waste at the end of the night. Some cake makers offer them as a matter of course, so ask, rather than assuming the quote is for real tiers all the way up.

  4. Bring your dietary needs to the tasting

We suggest a tasting 4 to 8 weeks before the wedding. Bring your dietary needs, such as a gluten-free, vegan or nut-free tier, and choose the flavour of each layer (lemon elderflower at the bottom, salted caramel in the middle and vanilla on top, for example). Ask the baker what they can do, and agree in writing how each dietary tier is marked on the cake table, so the right slice goes to the right guest.

  5. Agree on delivery, set-up and who cuts the cake

Ask when the cake arrives and who puts it together at the cake table. Stairs, lifts, narrow doors, a warm room or an outdoor table all change how the baker plans it, so tell them about the venue before they quote. Then agree who brings the cake knife, whether the cake is cut in front of guests or in the kitchen, and what happens to what is left (ask your venue whether it will wrap it for you to take home).

  6. Design the cake with your venue and flowers in mind

The cake is part of the look of the whole day. Tell the baker about your venue, the colours of your flowers and whether you would like fresh or sugar flowers on the cake. We suggest 3 to 5 photos for the consultation rather than 30, so the baker designs something for you instead of copying a board.

Common questions about wedding cakes in Australia

How much does a wedding cake cost in Australia?

It depends on the baker, and on the number of tiers, any dietary tiers, fresh or sugar flowers and how far the cake has to travel. Ask each baker for a quote that says what is included, delivery and set-up too, so you can compare them.

How many tiers should our wedding cake have?

As many as your guest list needs. Ask your baker how many servings each tier gives at their slice size, and how many tiers your numbers call for. If you want a taller cake without the waste, ask about polystyrene tiers iced to match the real ones.

How far in advance should we book a wedding cake?

We suggest booking your cake maker 3 to 6 months before the wedding, then having a tasting 4 to 8 weeks before the day, where you lock in the flavours and the design.

Should we have a wedding cake, a dessert table, or both?

Whichever suits you, and there is no wrong answer. You can serve the cake alone, add a dessert table, a gelato cart, late-night doughnuts or cultural sweets, or skip the cake altogether. Let your family's traditions, what your guests expect and the shape of your reception decide it.

Can we get a gluten-free or vegan wedding cake?

Yes, many cake makers can. Ask each one which gluten-free, vegan, dairy-free and nut-free options they offer: some make the whole cake to suit, and others add a dietary tier to a mixed cake. Bring your dietary numbers to the tasting, and agree in writing how each tier is marked on the cake table, so the right slice goes to the right guest.

Who delivers and sets up the wedding cake?

Ask your baker, because it varies: confirm who delivers the cake, who puts it together at the cake table and what time it arrives, in writing, before you book. Tell them about stairs, lifts, narrow doors, a warm room or outdoor heat at the consultation, because each one changes how they plan it.

What happens to leftover wedding cake at the end of the night?

Ask your baker and your venue who wraps it up, because sometimes it is the caterers and sometimes the venue's staff. Some venues wrap leftover cake at the end of the night so you can take it home or send it home with guests, and if you would like each guest to leave with a slice, ask the baker about pre-cut, individually wrapped slices.
