Pop Up Pizza

Pop Up Pizza is a mobile wood-fired pizza catering business run by the Mai, Rick and Ethan family from Bannockburn, near Geelong, serving Geelong, the Golden Plains, Colac and Ballarat. Mai brings four years' experience as head chef at a Melbourne Italian restaurant before turning her attention to pizza, and each base is hand-stretched from dough that is slow-fermented for two full days before being baked to order in a wood-fired oven built into the operation's trailer. The team caters weddings, birthday parties, corporate gatherings, festivals and markets, and guests are invited to watch, and sometimes help top, their own pizza.
